Drinks are only one part of demand. Handwashing, warewashing, rinsing, purging, cleaning, ice, leaks, and the end-of-day process also use water. Tank shape, usable capacity, pump performance, hot-water recovery, filtration, winter conditions, weight, filling, drainage, and disposal all affect the real system.
Nominal tank capacity is not always usable capacity, and beverage water alone does not represent the water required to operate and clean safely.

Plan protection for tanks, lines, pumps, filters, and the espresso machine—not just the room temperature. Ask the manufacturers and installer for a suitable heated-storage or winterizing plan, including the power it needs. Emptying the main tank may leave water elsewhere. If safe protection is unavailable, pause and winterize correctly. Never run a portable generator inside the trailer or improvise fuel-burning heat.
Match the pump to the pressure and flow required by every connected device. Include filters, line length, height changes, and uses that may happen together. Choose drinking-water-suitable components and confirm compatibility with your machine and installer. An accumulator can help some systems, but it is not a universal requirement or a cure for a bad connection. Plan service access and test the complete setup before opening.
Several faults can look alike: an empty supply, trapped air, a leaking connection, a restriction, or an unsuitable setup. Stop affected equipment and follow the pump and machine manuals for safe checks and priming. Do not keep a dry espresso machine running to force water through it. If the cause remains unclear, have the installer check the complete supply path. Restore reliable, sanitary water before serving.
Only if the machine’s instructions and your local reviewers accept the arrangement. Some owners use collection containers, but that does not establish approval for your café. Have a qualified plumber review the drain route, sanitation safeguards, capacity, and disposal method before fixing the counter layout. If gravity drainage will not work, ask about an approved alternative; an ordinary bucket or condensate pump is not automatically suitable.
